Arugula Microgreens are spicy and intense. As a microgreen they have less of the bitter flavor arugula can sometimes have as a full sized green. They are fantastic in salads and sandwiches. We love them on chicken salad sandwiches.
Health Benefits:
Arugula is wonderful for helping keep bones healthy and strong. The same amount of calcium is contained in arugula microgreens as is found in spinach. A benefit of the arugula microgreens is that it has a much lower amount of oxalates compared to spinach, which can prevent full calcium absorption. Arugula also contains a lot of protein.
